Mooie Nano_Lot van een heel specifieke cacao van Hacienda Torres in Choroni, een plaatsje aan de Noordkust van Venezuela, vlakbij het befaamde Chuao.
Smaakomschrijving van de maker: subtiel en betoverend. Notig, romig, boterig, fruitig. Met een lange delicate nasmaak met een hint van fruitigheid.
Zelf vinden we het zeker een zeer boterige, romige chocolade waarin subtiel wat gebrande tonen naar voren komen, en notige en vegetale smaaktonen.
Ingrediënten: nanotlot cacao, cacaoboter, rietsuiker.
Cacao 75%. Inhoud 50 gram.

This 200-year-old farm in Choroni, Venezuela, is dedicated to cultivating rare, indigenous cacao, stubbornly protected by its owner, Vicente, who resisted modernization. Filled with the glory and history of the past, the deep flavor that only genetically pure cacao can offer is like opening a time capsule. Master Chocolatier Domantas of Chocolate Naive discovered this special nano-lot during a trip to the region, and it can only be enjoyed now.
This chocolate is another great addition to our Grand Cru Nanolot collection. The Choroni region of Venezuela is renowned for its fine, aromatic Criollo cocoa, which is known for its complex flavor profile with fruity and nutty notes. Grown in the Henri Pittier National Park, the cocoa is produced using traditional methods on farms like Hacienda Torres.
At Hacienda Torres, the traditional post-harvest method has been used largely unchanged since the 17th century. The process begins shortly after the ripe pods are cut. The beans are extracted from the broken pods and fermented for 8-9 days in an old concrete vat, separated by wooden planks. This meticulous artisanal process is labor-intensive but is believed to be essential to the resulting quality.
Old Vincente still does things the old way on his 200-year-old Hacienda Torres cocoa plantation in Choroni, thinking back to his younger days. The main house and fermenter are now ghosts of their former glory, with crumbling stone walls and a tower slowly filling in with climbing vines and alam trees. It is believed that cocoa was introduced to the area 450 years ago, at the same time as the world-famous Chuao, a 20-minute boat ride away. The town of Choroni is surrounded by many old haciendas with cocoa plantations of historical significance. But some say that his grandfather’s slow pace has preserved the original cocoa better than the surrounding plantations with more ancestral cocoa with authentic genetics. Vincente is like one of his crumbling towers, the last one standing.
