Description

75% chocolate from forastero cocoa from Brazil.

Bertil Åkesson and Angelo Calmon de Sa bought the ‘Fazenda Semper Firme’ plantation in 2009. This is located in Bahia, Brazil. The plantation of 120 hectares is located in the ‘Mata Atlantica’, the wild forest with the highest biodiversity on earth. Bertil & Angelo have worked to restore the social structure and rebuild the traditional and special forestera variety with the name ‘parashinho’ which they say caused the glory time of Bahia at the beginning of the 20th century.

Chocolate Tasting note:
Soft, wood, earthy. With expressive notes of autumn scent, tobacco and the local pitanga fruit. (Taste notes from Akesson’s)
