The honey in these chocolates comes from ‘You’re a Honey’ – in the Manuka area in western Nelson. Friend with Karl Hogarth, the chocolate maker, who combined these with his 66% Peru chocolate with crunchy cocoa nibs.
Apparently not just a honey, a pollen count of 83% is described so that would provide a tremendously rich taste. We ourselves have little knowledge of honey, say nothing at all, except that we know that we can get various kinds of very nice honey at Beekeeping Hortensius – that’s enough for us for now.
Moreover, the combination in this bar comes out well. The nice soft full taste of honey with the slightly fruity flavor of the Peru cacao (which in itself is very worthwhile) and then the crunchy texture of the cacao nibs.
Ingredients: cocoa (cocoa beans, cocoa butter) sugar, honey.
