Dormouse roasted white chocolate. Soft, creamy, sweet and thanks to roasting a delicious caramel-like taste!
The biggest purists are not easily tempted with white chocolate – but having a taste for some sweets is not a shame, and we are pleased that we can offer a few nice white chocolates.
Because the cocoa mass is lacking, you do not taste a whole lot of natural variation – but there are enough variables left for the chocolate maker to experiment with and still get a very big difference in quality and taste.
Of course: the amounts of sugar, cocoa butter and milk can vary greatly – that is already a big difference.
For some makers just white chocolate is a nice relatively neutral basis for all kinds of additions (think of Jordi’s tea chocolates or the coffee bar or black chocolate from Omnom and of course the more traditional combination with vanilla)
If you want to go beyond that, there is still a very nice option to have a big influence on the taste: roasting.
Some chocolate makers make a roasted white chocolate. That is where this bar is one of.
Roasted white chocolate
All milk that goes into chocolate is in the form of milk powder – chocolate and water is absolutely not going together. And milk powder can be roasted nicely. Just exactly as you roast cacao or coffee in the oven and thanks to the maillard reaction all kinds of flavors change and arise.
You can definitely taste that in the taste – much more caramel, roasted. And that is again very nice in terms of taste in combination with the creamy structure and the sweetness of the sugars. So delicious candy.
