As far as we’re concerned, the makers – Fossa from Singapore – come up with gems time and again. Both their pure origin chocolates and their bars with flavor additives that range from all kinds of teas to lychee and salted egg.
For lovers of pure origin chocolates that are well to excellently made, we are therefore certainly happy with Fossa. Perhaps not the most suitable if you are just at the beginning of your chocolate discovery, and certainly not chocolates as a ‘weekday’ bar. Also because it is the price for a 50 gram chocolate – but to sit down extra well, for your chocolate tasting or for the chocolate connoisseurs who love to pay a little extra for high quality, complexity and taste nuances.
Anyway – we see the Ucayali River Cacao more often in the world of craft chocolate. You can find more information about the company (Ucayali River Cacao Company) and the cocoa fairly easily online. They are located in Pucallpa – the Ucayali region – named after the local river.
Soma has also made a chocolate from our range with the same cocoa (nice comparison material!), but well-known USA bean to bar chocolate makers such as Letterpress and Sirene also have beautiful creations.
Fossa describes this chocolate as:

The chocolate as we make it especially brings out the fruity and floral honey tones
