Two identical bars with exactly the same cocoa beans – from the Chuno variety from Northern Nicaragua. And identical percentages, and entirely the same operation. There is only one difference: during the five-day fermentation of the cocoa beans, these are reversed twice, with the Triple Turned three times. A minimal difference, you would say, but it really delivers a different bar.
So soft in structure. Delicious.
Taste note of the maker himself: Full body, nutty. Tastes of black olive, spicy and complex. Very soft finish.
