Two identical bars with exactly the same cocoa beans – from the Chuno variety from Northern Nicaragua. And identical percentages, and entirely the same operation. There is only one difference: during the five-day fermentation of the cocoa beans, these are reversed three times, twice at the Double Turned. A minimal difference, you would say, but it really delivers a different bar.
So soft in structure. Delicious.
Taste note of the maker: Very soft and friendly chocolate with a slight acidity.
(Old taste note) Right-by-sea, almost simple, classic chocolate flavor. Pronounced acidity. Showing black olive and lemon zest.
