You have cocoa and you have cocoa, one cocoa tree is not the other, one cocoa fruit is not the other, and one cocoa bean (kernel) is not the other.
Where you can buy ‘bulk cocoa’ in the supermarkets, actually almost a residual product from the pressing of cocoa butter (used for cosmetics, among other things), you can of course also use good cocoa powder if you want to bake, make chocolate milk – or wherever you want cocoa need.
And then it’s nice that Fu Wan from Taiwan also makes cocoa powder. These tree to bar chocolate makers are prized for their chocolates (including best dark chocolate in the world at the International Chocolate Awards), work directly with cocoa farmers in the area and can rightfully be called forerunners – Taiwan is certainly not known for its ancient cocoa culture – so pioneering work has been done here in recent years.
Anyway, cocoa powder. A package of 250 grams and for – we think – a very reasonable price.
