In this dark chocolate Georgia used Ramon Yuzu powder, the juice of the yuzu is then used, but without water because that does not work in chocolate, then you can throw the bar away after a few days. But in this way you do get the taste of the yuzu itself, and not of the peel or as happens that oil is made from it.
Our finding about the taste: a bit sharper than expected, but you taste the yuzu very well, and also that it contains more than just ‘citrus flavor’, really also a pine-like taste. Special. Because the whole (with the dark chocolate) is a bit overwhelming in taste, maybe I myself have something of balance. We’d be curious how the chocolate is with more creaminess, or some added milk or coconut. Nevertheless … a very yuzu chocolate this way.
