Special. Van St Vincent & the Grenadines. A small island where the St Vincent Cocoa Company grows cocoa. They manage around 250 hectares of land and buy the cocoa from around 100 farmers. This grows among all sorts of other crops such as corn, banana and ginger. In the shade of coconut trees and mahogany.
The cocoa from the various cocoa farmers is collected and fermented at a central location. This ensures optimum and even fermentation. Good for the quality of the cocoa.
Taste profile according to the maker: a full, powerful cocoa with a great taste of citrus and lime zest. Tones of bread and cahew. The tannins also stand out (like in a wine).
