What happened at Chocoa chocolate festival? We tasted a milk chocolate, from Krak. We had already heard that Mark Schimmel, the chocolate maker of the Krak chocolates, had been working on this for some time. Ever make a milk chocolate. But then a good one. Obviously. But it was just as special now. And as we can actually say with every new bar, it made us happy again.
We will describe in more detail exactly what we are tasting, at least a fine creamy bar in which a lot of cocoa flavor remains. And do not think of bitter or dark from the supermarket chocolates, but rather the splendor of cocoa. From nutty to distant fruity notes, and a taste that lingers in the (side of the) mouth for a very long time. Certainly not clashing with the milk, but rather in a – to our taste – very fine balance. Sweet, sweet – yes, absolutely. But then a very refined form of milk chocolate candy
And what we definitely think (but don’t know) is that there is something special about the milk used. Very tasty milk, good cows, or something else. We will certainly check again.

Cacao de Colombia recently installed a state-of-the-art fermentation and drying center in the lower community of Macondo, where they mainly source cocoa from about 10 farming families in the Magdalena department.
The technical expertise of these farmers is excellent: farmers are even doing their own pollination experiments to improve the quality and yields, which are currently around 700 kg / hectare in the region. Cacao de Colombia has been providing technical support and a stable market to farmers in the Sierra Nevada for the past 6 years, and the results are clear in both the quality of the cocoa and the impact on farmers. Farmers report a 72% higher annual income than before this new market existed. ”
