Origin chocolate from cocoa from Peru but in this case also the cocoa butter and the sugar from the Chanchamayo province in Peru.
So all (3) ingredients come from Peru and we can speak of a pure origin chocolate.
There are not many chocolate makers who press their cocoa butter themselves. Thus the cocoa butter usually comes from a different origin than the rest of the cocoa. There are a number in our assortment. Pump Street Bakery makes their cocoa butter from their own cocoa, and Areté does this and even uses (almost?) Cocoa butter from the same cocoa as the rest of the bar. Anyway, beautiful, also makes for the taste. It is not essential, but a nice extra and natural … then you know where everything comes from and that has its advantages in ‘direct trade’. Transparency is important. And it is nice that more makers are squeezing their cocoa themselves instead of buying it separately. And in this case even the sugar is special.
In addition to the cocoa butter, the cane sugar comes from the same region in Peru, and so we come to the qualification ‘pure Peru’ of this bar.
Nice. Also to compare with the other Peru bars of Morin, and this French maker has quite a number of them.
