Cacaosuyo also makes an 80% variant of the Cuzco Chuncho cocoa from Peru. Beautiful. This cocoa is also used by others for higher percentages, the soft taste and little bitters is ideal for it. Originals Beans, for example, makes their 100% chocolate from it.
So with Cacaosuyo 80%. And that tastes great. So much so that the International Chococolate Awards Americas (sort of the ‘semifinal’ for North and South America whose winning chocolates advance to the world final) awarded this chocolate not only a gold medal but also named it ‘best in show’ – a nice reward of course.

“It is a selection of Chuncho cacaos that we blend. Chuncho cacao are those native cacaos from the Quillabamba valley in the Cuzco region. Although they are all yellow-colored cocoa pods, they are very different in shapes sizes, and flavors. The company explains that this bean has some unique properties which they take advantage of when they make the bar. One feature is that their chocolate made from the Chuncho cacao is already naturally sweet. Even 80% dark chocolate needs only a little cane sugar and doesn’t have the normal bitterness associated with chocolate of this high a percentage of cacao. The flavor notes are a complex set of fruits starting with soursop, but it is actually more the flavor of the cacao fruit which very seldom shines through to the chocolate. it does. ”
