Pure origin chocolate with 70% cocoa from Hacienda Cacao Caribe in Las Trincheras Venezuela.
Made into chocolate by Casa Cacao in Girona. A bean to bar chocolate maker belonging to El Celler de Can Roca – world famous 3 star restaurant of the Roca brothers. Jordi Roca traveled to the source of chocolate, the cocoa countries of South America. To experience that what chocolate is all about … cocoa. This resulted in a book about his experience (also called Casa Cacao, highly recommended) but ultimately also in the home of the cocoa, in Girona. A place where you can experience chocolate and how the cocoa is made into chocolate. Now you could already experience through our shop how important the origin of the cocoa is, how important the work of the people who grow the cocoa. And however much that matters for the taste. But it is nice if more people discover this, and for that – we think – it is great if people who are so involved with and know about taste are committed to chocolate & cocoa.
The makers go on to say about it “Cocoa from the Hacienda Cacao Caribe, in the area of Las Trincheras (Venezuela) that has been fermented in wooden boxes for 5 to 6 days, covered with banana leaves and then in the sun and on the ground for 4 to 5 days is dried. In the Casa Cacao workshop we select the cocoa by hand, we roast, crack and winnow the beans, we add organic cane sugar and cocoa butter and conch for at least 48 hours. ”
Taste note from the makers: A soft acidity followed by raisins, brownie, pistachio and a hint of black olive.
