Description
Another beautiful variant in the series of pure origin chocolates from Definite Chocolate. All made in the Dominican Republic, and all with cocoa from the Dominican Republic. So in this case with 80% cocoa from ökö caribe. This is a cooperative in the Duarte region in the north. They grow organic – as they call it – Hispaniola cocoa. In the region they distinguish between ‘Sanchez cacao’ (cocoa that is dried immediately after harvest, lower quality) and ‘Hispaniola cacao’ for the cocoa that is fermented for 3-7 days. It is all Trinitario cocoa, but as you understand if you know how the taste of chocolate develops, the Hispaniola variant is a completely different world of taste thanks to fermentation.
