A creamy milk chocolate with pieces of dried cherry tomato and Taiwanese Maqaw pepper.
Chocolate with tomato? We really didn’t see that this combination could work with a chocolate bar. But if there is one maker in the world who can make something out of this – yes, then Fossa can. And so it happened.
The basis for this creation is a milk chocolate with 54% cocoa from Tanzania (Kokoa Kamili) – a fresh and fruity cocoa, which makes the milk chocolate creamy and almost airy.
Pieces of cherry tomato were added on top. Completely dried, of course – moisture doesn’t do chocolate any good – and so the taste is extra concentrated: umami & sweetness. Finally, the Maqaw pepper is added, these are fruits of the Maqaw tree – so not a ‘real’ pepper but also called mountain pepper and with a slightly peppery taste with some notes towards ginger/lemon grass.
Together they form an exciting tasting sensation – which you might look up to while tasting. Huh, what am I actually tasting? balsamic? Greenish taste notes? Then again a slightly peppery citrus taste? Then a soft cookie flavor comes out again? Then it ends with a nice warm slightly spicy taste, and you think of gingerbread again. And then you go back to milk, more green herbs? Or not at all – the pieces are somewhat unevenly distributed over the bar, so that each bite gives a slightly different taste. We sometimes find a disadvantage, but with this chocolate it is suitable for us. This way you can see it as a taste-discovery journey that you can undergo yourself, each bite just a little bit different.
