A double first. A new dark chocolate from Heinde & Verre, which we have the honor to be the first to put in our shop, made from a new cocoa variety.
We are happy to offer Heinde & Verre chocolates anyway. They take their task of making chocolate with delicacies from near and far seriously, they experiment extensively with all the different possibilities within the chocolate maker’s craft, they don’t just make chocolate but actively search for innovation – of which their special vegan chocolate is also a good example is – and are always looking for extra special cocoa varieties.
The cocoa is a new variety from Hacienda Victoria from Ecuador. ‘La Perla’ – a cross of a specific criollo cocoa with an arriba cocoa. The result is a cocoa that brings together the subtle, understated flavor notes of the criollo cocoa and the more rustic, pronounced character of the Ecuadorian Arriba cocoa. And that is a success, as far as we are concerned. A chocolate with a nice balance, lots to taste & a nice, very long aftertaste
Maker’s note: This bar is so delicate it’s hard to believe it’s actually 71% dark chocolate. Rich and refined, you discover firm notes of honey, nougat, nuts, caramel and soft white fruit wrapped in a never-ending lingering finish.
Ingredients: cocoa and cocoa butter, cane sugar.
