Hogarth, chocolate maker from New Zealand, does not shy away from the experiment. Fortunately. We already owe that great ‘Buttered Toast’ chocolate to that.
This time Karl Hogarth is looking for the combination with … chips! And not just any chips, but Kumara (sweet potato) chips from friends Ned & Mina from Proper Crisps. In New Zealand, this company makes crisps from local Kumara varieties. Hogarth uses these sweet potato chips ground together with criollo cocoa from Peru.
A wonderfully sweet milk chocolate experience with the absolute caramelized experience of the chips, with both caramel and fruity flavors and delicious soft chocolate. And yes, of course you can taste the sweet potato in return. Whether you taste exactly that it contains Red Kumara (Owairaka), Gold Kumara (Toka Toka) and Orange Kumara (Beauregard) … no, we don’t think so.
But sweet potato chips & sweet creamy milk chocolate with fruity notes … it remains a bit crazy, and getting used to, for ourselves – but it might also be a brilliant combination. And it is very nice that Hogarth is once again looking for a combination with befriended makers, in this case of Proper Crisps, and the sweet potato that, like cocoa, also originates from South America and over the years ended up with the Maori population in New Zealand. A piece of history that Hogarth refers to with love.
