Description of the maker:
This Acriollado cocoa grows in the misty mountains in the north of Nicaragua and is named after one of the first people to grow the cocoa.
The harvest of small farmers with less than 3.5 hectares is collected weekly and transferred in wooden crates to the fermentation facility of the community where it gets its unique character. During our processing, we try to preserve as much of the original fermented flavors of the cocoa as possible.
