Description
Described by a valued chocolate knowledge as ‘as if you are falling into a jar of rosehip jam’ – and as far as we are concerned a chocolate with substantial fresh acids, we are thinking of classic sour lemon flavor, but like sour beers this might be scary, and you should always adhere to the ‘3 sip rule’ or in this case ‘3 bite rule’. Only after three pieces of tasting can you discover extra complexity ‘through the acid’. It’s just a matter of getting your taste used to it.
The makers say: “Gran Nativo Blanco cocoa is grown by the small-scale cocoa farmers of the Norandino cooperative in the Piura region in northern Peru. Most of these beans are of old criollo cocoa variety and whole white, with an intense gooseberry aroma and lime, with sweet tones like panela and lots of floral tones. Fortunately we have managed to preserve most of the tastes of this with careful roasting “
Some more about the cocoa at Cacaotales, distributor of the cocoa.
