Just like you can press olives to make oil, you can also press cocoa to get cocoa butter.
For the white chocolates that you find in the supermarket, made from moderate bulk cocoa, that is not enough. The cocoa butter is further chemically processed (deodorized) and usually everything is added to make the flavor plum.
This is of course different with the makers we sell white chocolate from. Without crazy additives, without weird chemical processes. Cocoa butter, milk and sugar. No more is needed.
In this case, the white chocolate is roasted in the oven for an exciting extra taste experience. The color changes, and so does the taste. Nice and sweet but also full and creamy and logically like other caramelized sweets such as dulche de leche, caramel or anything else where sugar is heated and turned into caramel in an almost magical way.
Description from the makers: “To make this bar, we make white chocolate and roast the finished batch in the oven to caramelize everything and give it a dulce de leche sweetness. For those wondering about white chocolate: 50 % of a cocoa bean is cocoa butter (the other half is the cocoa solids that are made into cocoa powder). So yes, it is chocolate, just no cocoa powder in it, just cocoa butter. Definitely a sweet treat.”
