A nice and interesting special edition (limited edition). Solkiki already made a 68% chocolate from the famous Marañon (Fortunato) cocoa from Peru. Even for a few years, and was previously awarded a number of medals at the chocolate awards.
That version has no added cocoa butter at all. Cocoa with the naturally present cocoa butter and otherwise only cane sugar.
This bar is different, here it is 56% and then a generous portion of 12% cocoa butter added.
This is also how the French chocolate makers originally made their characteristic chocolates, such as Bonnat or Pralus. Very creamy in structure and mild in taste.
Naturally great to order this bar together with the original Marañon 68% from Solkiki and to taste them side by side. We have to say … for us this ‘French Style’ wins in this case, we think that this cocoa and the processing (branding, grinding) as Solkiki does can use it somewhat rounded off and find it a more pleasant creation
Incidentally, the roasting seems to have been done differently. Since it is about French style, we assume that roasting is at a higher temperature, but we yet to check.
Ingredients: Cocoa (Nacional cacao Fortunato # 4), cane sugar, cocoa butter.
The ingredients are listed as organic but do not have the organic quality mark. The entire bar is therefore not certified organic.
