This chocolate is very special, especially thanks to the structure!
We know the ingredients … cocoa + sugar. The operation is … different! The cacao nibs and sugar are very minimally processed, actually only partly milled. This creates a totally different structure than we are used to from chocolate as we know it, and that certainly influences the taste experience.
You can tell from the looks … it looks more like a biscuit than a chocolate bar, but it is really just cocoa (66% Chuao Venezuela) with cane sugar.

May contain traces of nuts, milk, gluten & soy.
(Now made with the Chuao Venezuela cacao, the image still shows the old version with Madagascar cacao, but you will get the current wonderful version with Chuao)

They look somewhat like miniature charcoal briquettes and the chunks of this exceptional bar indeed warm your heart with rich notes of mocha and cardamom. While the friable texture is evocative of chocolate shortbread, this bar is only modestly sweet and more brittle than tender (if you prefer smooth chocolate, this one’s not it) . This layered consistency pairs perfectly with the earthy, complex flavor. The “Old School” bars are one of SOMA’s finest creations.
