Zotter 72% pure origin chocolate ‘Peru Cacao Tochache’, named after the farmers’ cooperative where the cocoa comes from: Cooperativa Agroindustrial Tocache.
Zotter describes this bar as follows:
“A high percentage of single origin chocolate from organic cocoa from the young ‘Cacao Tocache’ cooperative, in the middle of the San Martin region – notorious for growing drugs. Organic cocoa instead of ‘coca’ component for cocaine. To make the switch quickly and easy to make, the farmers had begun to cultivate the fast-growing CCN61 cocoa, a popular cocoa tree, but not one that offers high quality, so we helped farmers set up a radical quality campaign.
A drastic reduction in quantity has created an interesting cocoa bean with a lot of character – a change directly copied by winemakers. We are happy because the ‘Cocoa Tocache’ cocoa farmers are very motivated and the farmers are happy because for the first time they can export their cocoa to Europe – and directly to Zotter. Voila! “

Zotter, or as they are generally called ‘Zotter Schokoladen Manufaktur’ is a company led by Josef Zotter that has been making bean to bar chocolates in Austria since 1999.
